Maple sap, eh? Have you ever tapped birch syrup? We did that one year. Have a friend with maple trees, we took the birch. It's got more water, and takes longer to boil down, thus it "burns" more, and comes out more like molasses in flavor. My daughter made birch-syrup cookies for the county fair that year. And I made a mess cooking that down in my kitchen. You should have seen the ceiling! |
